Inspector's notes

Observed container of peeled hard boiled eggs in small reach-in cooler holding at 45-47*F. Per PIC, eggs had been in cooler for less than 4 hours and were moved to alternate cooler at time of inspection. Reach-in was holding at 42.5*F - instructed employees not to use cooler until fixed and holding at 41*F or below (limited TCS items in cooler, and multiple alternate coolers available). Ensure all TCS foods are holding at 41*F or below. Corrective Action: Corrected at time of inspection.
