Observed in the facility at the preparation line sour cream that had been prepared at 8:30am in a large tub at a temperature of 64F and tacos that had been prepared at 8:30 had a temperature of 59F . All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly8:30 cool to 41°F at time of inspection. The PIC divided the sour cream into to tubs. Tacos were also placed in separate tubs and placed in the walk-in cooler to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
