Observed Gouda Cheese cold holding in a basket in the deli reach in unit at internal temperature of 51 deg F. The cheese contains milk and says keep refrigerated on the package. Deli manager informed the cheese had been in unit since the night prior and discarded. Observed sausage gravy cold holding in the walk in a container with plastic covering at internal temperature at 57 deg F. Deli manager discarded gravy during inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed baked chicken in the display hot holding box with an internal temperature range of 120F-125F. Per PIC and cooking log, the chicken was cooked less than 2 hours prior to inspection. Deli manager voluntarily discarded chicken at time. The other TCS food items in the case were all at proper hot holding temperature. PIC put in a service ticket to have the display case looked at by maintenance. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed pizza, under a time as control policy, without a time mark when it was taken out of temperature control. Per deli manager, the pizza has been out for less than 2 hours prior to the inspection. The pizza being held under time as a control was properly time stamped at time of inspection. A food establishment, when using time as a control, must follow their written procedure; and mark when a TCS food is taken out of temperature control. Corrective Action: Corrected at time of inspection.
