#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cut tomatoes, shredded cabbage, and shredded lettuce located in the small self service container with an internal temperature range of 49F-52F. Per PIC, the food items have been in out for less than 2 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Correct prior to next routine inspection. -Provided sneeze guard guidance document for the salsa and grilled onions and roated peppers bar.
