Observed cooked diced potatoes (51*F) cooling in refrigerated drawer under grill next to diced ham (44*F) and cooked chorizo (46*F). Person in charge stated potatoes were cooked within 1 hour prior to inspection, and were placed in walk-in for 30min before placing in drawer with chorizo and ham that were at 41*F. Cooling foods should be placed in top shelf of walk in or reach in refrigerator, away from already cooled foods. Foods placed in cold holding units should be a temperature of 41*F or below. Person in charge removed food items and placed in walk-in freezer to reach an internal temperature of 41*F within 1 hour. Correct By: Corrected At Time Of Inspection
