Inspector's notes

At in use 3-compartment sink, employee washing and rinsing dishware then rinsing dishware with sanitizer and not allowing to soak for minimum contact time. Instructed employee on filling sink with sanitizer solution and allowing dishware to soak in sanitizer solution minimum 60 seconds. Food-contact surfaces sanitized using quaternary ammonia is to be sanitized with a contact time according to manufacturers specifications. Corrective Action: Corrected at time of inspection.

Inspector's notes

In bakery case, cream puffs, made with real cream filling, with internal temperatures of 50*F-55*F. Per employee, cream puffs were in bakery case >24 hours. Cream puffs were discarded. See embargo form. Ambient temperature of bakery case was 39*F at one of end of case and 50*F and other end of case, taken with inspector probe thermometer. Discontinue use of far end of case for storing of TCS foods until repaired. Repair order was placed at time of inspection. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
