Observed hand sink in the ware washing area without paper towels. PIC stated that the dispensers were recently taken down for repair work behind the wall. Informed PIC that hand sinks need to be supplied with hand drying provisions at all times. PIC provided hand towels at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection. 6-301.11 - Priority Foundation: Handwashing Cleanser, Availability. Sliced corned beef, gyro meat, and sliced roast beef in cold holing unit at prep station with an internal temperature ranging 44-46*F. Person in charge stated food was just prepared within 1 hour of inspection and placed in unit to cool. Foods cooling should be placed in walk-in as cold holding units are designed for cold holding at 41*F or below only, not cooling. Manager had employee place foods in walk-in for rapid cooling. Manager turned up temperature at water heater and hand washing sinks reach a temperature of 100*F and 3-compartment sink reached a temperature of 120*F.
