The person in charge (PIC) stated employees were working with the garlic in oil, ground beef, and fried potatoes approximately an hour prior to the inspection. At the time of inspection, the PIC voluntarily discarded the pasta and marinara and moved the remaining TCS items noted in walk-in refrigerator to rapidly cool.
