Internal temperature of 110*F for nacho cheese that was placed in hot holding unit for reheating. Per operator nacho cheese was placed in hot holding unit at 10:30am this morning and had not reached the adequate reheating temperature of 135*F during the 2hour time frame. Discussed with operator to remove nacho cheese from hot holding unit and place a new batch for reheating in electric stove top unit and not in hot holding unit. Operator proceeded to adequate reheating procedures at time of inspection. Corrective Action: Corrected at time of inspection.

Per operator, hot holding unit for scoops was not turned on water in batch was from last night. Instructed operator to discard water and replaced utensils. Discussed either keeping adequate 135*F for scoops during all hours of operation or replaced water minimum every 4hours. Corrective Action: Correct prior to next routine inspection.
