Inspector's notes

Observed cooked chorizo and cut cooked mushrooms in a tabletop cooler at 45 °F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

The vacuum sealed items were frozen in August and thawed on 9-13-23. Discussed with manager that he needs to apply for a variance to continue to vacuum-seal food and hold for over 48 hours. Embargoed the sliced ham, turkey bacon, sliced corned beef and deli turkey. Discussed with PIC to not use the vacuum sealer until the variance application and process is discussed with the county.
