Inspector's notes

Establishment uses time as a control for chicken wings and fries. At time of inspection two containers of cooked chicken wings and one container of fries were sitting out at room temperature. No documentation for when food was taken out of temperature control was noted anywhere. Instructed staff to label time when items were placed out. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.

Inspector's notes

Single door cooler near the entrance of the kitchen had leaf lettuce, fried chicken cutlets for sandwiches, and sliced cheese (all <1lb) measuring an internal temperature of 56-58'F. Ambient air temperature of cooler measured 55.4'F with min/max thermometer. Per person in charge temperature of cooler had not been verified at any point earlier in day. TCS items were embargoed. Other adequate refrigeration nearby to hold TCS items until cooler is repaired. TCS foods shall be held at 41'F or lower when cold holding. Corrective Action: Corrected at time of inspection.

Internal temperature of chicken ranged from 68-71'F. Per cook, chicken had been cooked approximately 2 hours prior. Kitchen staff placed wings into walk-in cooler to finish cooling rapidly.
