Observed a to-go Pepsi cooler at the restaurant entrance containing Rosati's brand TCS bleu cheese, Caesar, balsamic, and Italian dressings with an internal temperature of 52*F. The blue cheese and Caesar had been in the cooler since 8 am and the balsamic and Italian since Sunday afternoon. The person in charge (PIC) was informed that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: All TCS foods improperly cold held were discarded by PIC at time of inspection. Observed cheese sauce and vanilla frosting prepared on Saturday in the fridge adjacent to the cold bar for salads, sandwiches, etc. being cold held without a date mark label. The person in charge (PIC) was informed that all ready to eat/temperature and time controlled for safety (RTE/TCS) foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
