All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Calibrated thermometer with person in charge (PIC). Observed covered diced tomatoes and bagged raw shrimp, prepared yesterday, with internal temperatures ranging between 47°F and 49°F. Ambient air temperatures measured between 42°F and 43°F. PIC stated they just had a delivery and left walk-in cooler open for over 15 minutes. All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed not propping cooler door open and only opening it as needed. Also discussed allowing food items to fully cool to 41°F before tightly covering/closing. Corrective Action: Corrected at time of inspection.
