Inspector's notes

Observed 88°F-110°F internal temperature range, per probe thermometer, of shredded beef, shredded chicken, and carne asada inside hot holding wells next to cookline. Per food employee, shredded beef, shredded chicken, and carne asada were cooked to 165°F and then placed into the hot holding well one hour prior to start of inspection. Per food employee, hot holding wells were not turned on. Except during preparation, cooking, or cooling all TCS foods shall be maintained at 135°F or above. All listed TCS foods items were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed bar dishwasher with chlorine sanitizer measuring at 0 PPM. Staff confirmed dishes had been run through the bar-dishwasher today. Staff re-sanitized dishes at time of inspection. The chemical concentrate bottle was low, and the manager ordered a new bottle or concentrate at time of inspection. Staff filled the sanitizer basin of their three-compartment sink with chlorine sanitizer, in range, and plan to sanitize dishes there until the dishwasher is dispensing sanitizer in the correct range. Staff to test the sanitizer strength on the first cycle of dishes. Reviewed sanitizer concentration requirements. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. The manager stated they are getting a new dishwasher next week. Corrective Action: Corrected at time of inspection.
