Inspector's notes

On 9/17, the temperature of the chili housed in the chili and cheese hot holding cabinet was observed to be 104 degrees Fahrenheit. Per person in charge, the chili had been inside the hot holding cabinet since 9/14. Except during preparation, cooking, or cooling all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Person in charge stated that they will place a closed sign on the unit until the machine is serviced by the vendor.

Per Person in charge, sanitizer solutions are made on-site. Observed spray bottle used for cleaning food contact surface counters at a concentration above 200ppm. Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Discussed appropriate concentration range (50ppm-100ppm) and procedure in creating sanitizer solutions with the person-in-charge.
