Inspector's notes

About 60 packages of freshly made sushi were found cooling in the walk‑in freezer inside two stacked insulated boxes, preventing rapid cooling. At 30 minutes, the sushi measured 55°F, not meeting required cooling parameters before transport to another location 13 miles away. PIC and manager were advised to spread packages on trays in the freezer for faster cooling. The PIC followed the recommendation and cooled the sushi to 38°F before placing them back into the insulated boxes for delivery. Corrective Action: Corrected at time of inspection.

Observed spicy tuna mixture in the reach-in cooler covered at 51'F and cooked rice in a tall container at 100'F. Person in charge stated both items were prepped about an hour prior. Spoke to person in charge about utilizing the walk-in cooler for cooling from prep and to leave food items in shallow containers uncovered to facilitate heat transfer and ensure the food goes down in temperature within the proper timeframe. Corrective Action: Corrected at time of inspection.
