Observed meat to be used in soup on stove top at 91*F. As per the owner, meat was prepared approximately 2 hours prior to the inspection. Meat is added to soup as needed when cooking. Once cooked, food to be held greater than 135*F or at 41*F or lower. Meat was placed in walk in cooler to continue cooling while soup was being prepared.
