Core-3-304.14, C: Wiping Cloths, Use Limitation Observed that the sanitizer solution in the wiping cloth bucket in the kitchen tested at 0ppm for chlorine sanitizer. Moist cloths used for food and nonfood shall be kept in an approved sanitizing solution. The chlorine sanitizer concentration should be between 50ppm and 100ppm measured using the appropriate chlorine test strips. Ensure test strips are available in the kitchen for use. The sanitizer solution should be changed every 4 hours. The PIC stated they will test the sanitizer concentration and change every 4 hours. Correct By: Corrected At Time Of Inspection

Electronic submission of violation correction may be provided by email in lieu of an on site reinspection by emailing a picture of the purchased test strips to the inspector within 10 days of this inspection.
