Inspector's notes
Observed a large pan of cooked peas, corn, and carrots in the hot box with an internal temperature of 121*F. Ambient air temperature of the unit was 174.8*F, measured using min/max. PIC stated that this item had been in the unit since over two hours prior. Informed PIC that the product needs to be discarded due to improper hot holding. PIC discarded the food at time of inspection. Food was embargoed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Due to the violations noted on this inspection report, County legal action may result from this inspection.Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Upon inspection, a new combi water-attached ovens were installed. Per PIC the ovens were installed last December, and they replaced two convention (non-water) ovens. Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
