Inspector's notes

Observed two stations where Angry Chickz sauce (63-65°F) was being packed into single serving cups. Staff responsible for prepping the Angry Chickz sauce were engaged in other responsibilities (ex. cashiering, taking drive-thru orders, etc.) and had left the Time Temperature Control for Safety (TCS) foods out at room temperature. Alerted the manager who stated the sauce had been out for less than one hour. Instructed staff to put the sauce back into the walk in to cool down. Discussed food flow with cook staff. Time Temperature Control for Safety (TCS) foods are to be actively prepared, and temperature controlled. Staff to prepare TCS foods in a small enough quantity that temperatures can be maintained. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-7-202.12, P: Conditions of Use Observed Quat chemical sanitizer in the three-compartment sink measuring above 500 PPM, with clean dishes drying by the basin. An employee moved the dishes from the clean side and placed them on the dirty side of the sink and then diluted the sanitizer solution with water to the appropriate range. Alerted the Person in Charge that the sanitizing solution was above the recommended range, and they reached out to their sanitizer vendor. In the meantime, kitchen staff will dilute the sanitizing solution to the appropriate range (150-400 PPM), with water, until the dispenser can be serviced by EcoLab.
