Inspector's notes

Observed employee handling dirty dishware, placing them into warewashing machine, then handling clean dishware without washing hands in between. Observed employee working with raw fish, grab a bottle of oil from under a table, add oil to fish, then return to working with raw fish without washing hands or changing gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrected at time of inspection.
