Potato and tomato soup, with an internal temperature of 83-105*F. Person in charge mentioned foods were placed in the unit within 3 hours prior to inspection. It was determined that outlets used were associated with a commonly faulty breaker. All hot temperature-controlled foods should be held at 135*F or above. Person in charge turned reheated to reach internal temperature of 185*F to hold in hot box at 135*F. Recommended using outlets with securely working breakers on to maintain proper hot holding temperatures. PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. PIC stated that they were waiting for a truck delivery anytime which will have paper towels. House keeping staff stocked both sinks with paper towels at time of inspection. Hand drying towels must always be available at all hand washing sinks. Residual moisture on the hands can increase the level of touch-contact associated bacterial transfer following handwashing. Additionally, please ensure that hand washing sinks are not obstructed/blocked. Correct By: Corrected At Time Of Inspection
