PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Observed pre-packaged, cooked TCS meals (such as pork and salsa, pasta, and tamales) with internal temperatures between 43-51°F at the time of inspection. The ambient air temperature of this unit was 39°F, but the Person in Charge (PIC) stated the refrigerator is frequently opened and closed. PIC stated the temperature is digitally monitored but could not be verified that the temperature was 41°F or below with in the last 4 hours, so TCS food in this unit was discarded (see embargo form). Discussed cold holding policies and monitoring with PIC. Ensure all food being monitored by cold holding maintains internal temperatures of 41°F or below at all times.
