PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection - see embargo form. Also, observed pepperoni and shredded cheese ranging from 42*F to 44*F in the bottom of the make-line unit. Ambient temperature of the unit was 42.4*F using min/max thermometer. Corrective Action: Corrected at time of inspection. Predefined Comment: Shredded cheese and pepperoni that were improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Employee took off contaminated gloves and put on new gloves with no hand washing in between. With contaminated gloved hands employee proceeded in touching clean food contact equipment and pizzas on the pizza line. Notified Person In Charge (PIC). PIC directed employee to take off contaminated gloves and wash hands appropriately. ====This violation refers to employee hands actually being clean and washed when necessary. Immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles. Notified Person In Charge (PIC). PIC confirmed internal temperatures and discarded improperly cooled cooked pastas. Per PIC and date marking products was prepared last night. ======= Within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less.
