Observed utensils and containers stored in handwash sink across from display case cooler and handwash sink across from walk-in cooler. Handwash sinks shall be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities shall be maintained in a condition that promotes handwashing. Person in charge (PIC) relocated items blocking handwash sinks at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a meat saw with dried meat debris along blade and internal compartments. Per PIC, meat saw was last used day prior to inspection and was ready for use. All food-contact surfaces shall be cleaned to sight and touch. All food-contact surfaces that contact TCS foods shall be cleaned every 4 hours by washing, rinsing, and sanitizing. Discussed proper washing, rinsing, and sanitizing of the equipment. Instructed PIC to take the equipment apart and properly clean. Corrective Action: Corrected at time of inspection. 3RD CONSECUTIVE VIOLATION.

Discussed maintaining soap, paper towels, and a trash basin near ALL the handwashing sinks. Handwashing sinks to be ALWAYS maintained unobstructed and accessible. Observed raw fish (57°F) sitting in a bucket at room temperature by the meat saw. When staff were asked about the preparation process, they stated the fish was taken out at 10 PM the night before and placed in cold standing water overnight to thaw and then cut this morning (see embargo). All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under continuous cold running water, or as part of the cooking process. Corrective Action: Corrected at time of inspection.
