Inspector's notes

Observed shredded cheese and sour cream on the banquet counter with no cold holding. Per PIC, both were kept as time-as-a-control and were to be thrown out after an hour. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Provided county guidance for creating the proper documentation and procedures. Corrective Action: Correct prior to re-inspection.
