Observed an empty sanitizer container connected to dish machine. Per PIC, dish machine had not been utilized today. PIC was able to obtain bleach at time of inspection. Demonstrated how to set up three-compartment sink with appropriate bleach concentration at time of inspection.

Inspector's notes

Observed dump tray and multiple beverage cans stored in only handwash sink at time of inspection. Handwash sinks must be maintained so accessible at all times and must be maintained in a condition that promotes handwashing. Person-in-charge (PIC) removed cans and dump tray from handwash sink at time of inspection. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Corrective Action: Corrected at time of inspection.

Observed warewashing machine with 200+ ppm chlorine during run. Establishment was not open and operating and no glassware was observed being washed at time of inspection. Also observed a significant amount of soap suds post run. Discussed with person in charge having the warewashing machine serviced prior to use to address excess soap and sanitizer; discussed using 3-compartment sink until the warewashing machine can be serviced. Demonstrated how to measure sanitizer using test strips.
