Observed container of cheese sauce prepared the day before inside walk-in measuring at an internal temperature of 48-52°F with probe thermometer. Discussed with PIC to recheck any container with cooked TCS food before putting lid on container to cool and that All Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. In walk-in refrigerator observed an open pan of raw chorizo being stored over an open container of alfredo sauce, cooked steak, and cooked chicken tinga.
