Observed rib sandwiches and egg rolls prepared over 4 hours prior in hot case under 135*F. Per person-in-charge (PIC), food items in hot case are under time as a public health control and had a discard time of 12:17 PM. PIC discarded food items kept past time at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.

Observed sanitizer bucket being stored in handwashing sink located by cash register. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Handwashing sink shall be used for handwashing only. Observed roller shelfing blocking access to handwashing sink in question. PIC relocated all items blocking handwash sink at time of inspection. Handwashing sink shall be readily accessible at all times. Corrective Action: Corrected at time of inspection.
