Observed multiple TCS foods in prep fridge held above 41°F at time of inspection. Foods include cooked eggs (51°F), sausage (51°F), cheddar cheese (50°F), cream cheese (44°F), strawberry cream cheese (47°F), and turkey patties (48°F). Person in charge (PIC) stated all TCS items had been put in the unit around 10am with temperature log showing 37-38°F at 10am. Milk in beverage fridge internal temperature of 50°F with 10am temp log showing unit at 39°F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection with frequently used items put on 4 hour time as a control. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
