Facility is fermenting brisket sauce in the walk-in cooler. Reviewed process, must be fermented under refrigeration at all times and follow all time/temperature control guidelines. Must be dated to be used within in 7 days of first preparation. As per facility process, they cook ingredients, let sit in walk-in to ferment for two days and then use product. This would allow only a 4-day use. To operate outside these guidelines would require a variance from this department.
