Inspector's notes

Observed PIC handling money from a customer, put on gloves then proceed to handle cookies without washing her hands. PIC properly washed hands at handwash sink at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Observed no CFPM on site at time of inspection. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Observed no hand drying provisions for the hand wash sink at the front of the kitchen. PIC stated they didn't have any paper towels for the hand wash sink and then provided napkins. Each handwashing sink must be provided with hand drying provisions at all times. Corrective Action: Corrected at time of inspection. Observed floor sink for th3 compartment sink with gaps making the floor not a smooth cleanable surface. Observed unused oven exhaust at the end of the kitchen. Please remove exhaust and repair open hole in the ceiling. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed in the restroom, there were no paper towels or automated dryer available. Employees stocked restroom with single use paper towels.
