Preparation table was observed to be holding below 41ºF for all TCS items within the unit. Per the owner, the cooler was removed and the coils were fully cleaned and serviced. Capacity of the unit has been restored. Discussed pattern of non-compliance and the legal process with owner and manager.

Observed prep table containing various cut leafy greens, tomatoes, bacon, and pooled eggs with an internal temperature measuring 48-51*F. Person in charge rapidly cooled TCS items and replaced with smaller portions to be used with company's existing time as a control policy. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed preparation table in front of grill with an internal ambient temperature of 46-49*F after measuring with a min-max thermometer for 25 minutes. Requested that the person in charge move TCS items to a functioning unit. Discussed using company's existing time as a control policy for items in refrigeration and storing TCS items in an alternative location until unit is serviced. Establishment has sufficient cold holding capacities to continue operation. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. **Re-inspection required**, please repair the unit prior to 2/17/25. Please contact inspectors with updates or questions.

Observed real butter cold holding in food preparation area at internal temperature of 76 deg F Manager informed the butter had been removed from cold holding earlier in day and placed in freezer for rapid cooling. Observed half and half creamer on counter in dining area at internal temperature of 52 deg F. Manager discarded during inspection and inspector discussed the use of time as a public health control for the half and half creamer. Corrective Action: Corrected at time of inspection.
