Inspector's notes

Observed salmon filets in deli case style cold holding unit in ROP packaging with an internal temperature of 47°F. PIC states these had been placed in the unit on Monday, 4/20. All other items in unit were in temperature. Minimum temperature of unit using min/max thermometer was 41.7°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Due to the violations noted on this inspection report, County legal action may result from this inspection.Inspection report e-mailed. Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Establishment was observed conducting outdoor food operations to prep/season, cook, and hot hold hamburgers with a small portable grill and a chaffing dish without Department approval. The outdoor cooking setup does not have a hand washing sink available that is not inside the establishment on the other side of a door. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.Re-inspection is tentatively scheduled for April 2, 2025.
