Person in charge (PIC) instructed employee to remake sanitizing solution at proper concentration and re-wash, rinse, and sanitize recently cleaned items. Verified that sanitizer solution was remade at proper concentration. Corrective Action: Corrected at time of inspection.

Observed al pastor pork and carne asada in steam well with internal temperatures between 110-122 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Person in charge (PIC) stated that al pastor pork and carne asada were cooked and placed in steam well 1 hour prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection and temperatures were verified by inspector. Corrective Action: Corrected at time of inspection.
