Inspector's notes

Observed a buildup of organic matter on the inside right panel of the ice machine by the kitchen area. The PIC cleaned the nozzle at the time of inspection. Corrective Action: Corrected at time of inspection. Observed buildup of organic matter on the beverage nozzle at the bar area near the handsink. All food-contact surfaces that contact Non-TCS foods must be cleaned every 24 hours by washing, rinsing, and sanitizing. Corrective Action: Corrected prior to next routine inspection. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-4-501.114 (F1-2) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- On-site Generation. Addl Notes: Observed the dish machine at the main bar area to measure 25ppm chlorine and the dish machine at the main kitchen to be measured at 0ppm chlorine. The 3 -compartment sink was set up at the time of inspections and all barware and kitchen utensils, and equipment must be washed rinsed and sanitized at the 3-compartment sink until the dish machines are repaired. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed several containers of spices removed from the bulk containers without and labeling indicating the contents. The person in charge added labels at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed strainer and dump tray blocking both hand sinks at both bars. Handsinks must be maintained so accessible at all times and cannot be used for purposes other than handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. PIC relocated all items blocking handwash sink at time of inspection. Discussed with PIC using a dump bucket with strainer and empty routinely instead of handsink to dump out ice/straws/garnishes. Corrective Action: Corrected at time of inspection.
