Repeat violation: 2nd. Observed sliced cooked deli meats in display cooler bearing no date marking. Meats had been opened one to two days prior as per person in charge. Ready-to-eat, time/temperature control for safety (RTE/TCS) foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day they were made as day 1). All RTE/TCS foods were properly date marked at time of inspection. Corrective Action: Corrected at time of inspection.

Observed grilled chicken for sale to customers in insulated container at 118-125 °F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Person in charge stated that chicken was cooked 15 minutes prior to temperatures being taken. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Instructed person in charge to maintain chicken over heat to maintain hot holding over 135 °F. Corrective Action: Corrected at time of inspection.
