Inspector's notes

Observed cottage cheese, sour cream, diced tomato salsa, hardboiled eggs and blanched artichokes cold holding in the 2-door under counter refrigerator with internal temperatures of 50-52F, probe thermometer, verified by person in charge (PIC). The ambient air temperature of the refrigerator was 55F during the inspection and for an unknown length of time. PIC voluntarily discarded the TCS foods, see embargo form. The refrigerator will not be used to store TCS foods until it is maintaining 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. Corrective Action: Corrected at time of inspection.

PIC stated cooked food was placed at 11am. Time of inspection is after 2pm. PIC directed employees to discard improperly hot holding hot dogs and bratwursts. ====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher.
