Inspector's notes

Observed rear of walk-in fridge section holding TCS foods such as pepperoni, sausage, salami, feta, seasoned raw chicken, shredded chicken, pasta, salmon, asparagus, shredded cheese, couscous, raw steak, buttermilk, and salsa picante holding 45-52*f degrees. Walk-in fridge was able to be turned down and food cooling to 41*f degrees at time of inspection. PIC stated walk-in was in temperature at late morning. Corrective Action: Corrected at time of inspection.
