#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cooked egg, sausage, yogurt cups, butter, and cream cheese with internal temperatures ranging 45*F-46*F. PIC stated that the products had been in the unit for over four hours. Informed PIC that the food needs to be discarded. PIC discarded the food at time of inspection. Food was embargoed. Ambient air temperature of the unit was 45.1*F, measured using min/max. After discarding all food, the ambient air temperature of the unit dropped to 40.1*F. Discussed refrigerator air flow with PIC. Suggested storing less in the unit and have boxed items on the bottom to improve air flow. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
