Inspector's notes
Observed numerous time-and-temperature control for safety (TCS) foods including cooked turkey, potato salad, and milk, with internal temperatures of 49-52 degrees Fahrenheit in a walk-in cooler that was not holding cold. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge (PIC) contacted repair technician for the walk-in cooler and obtained a refrigerated van from a different store location for short-term additional cold-holding. Items prepared on the day of the inspection were moved to alternate refrigeration. Ready-to-eat foods in the unit for longer than 4 hours were voluntarily discarded - see embargo form. Corrective Action: Corrected at time of inspection.

Walk-in cooler was measured with an ambient air temperature of 51F with min-max thermometer while holding out-of-temperature TCS foods. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. Re-inspection is scheduled for 7/17/26.
