Observed multiple vacuum packaged bbq items (smoked brisket, ribs, chicken) in reach in freezers, items were date marked in February and March, items were removed from packaging at time. Please ensure a variance is obtained if business intends to continue vacuum sealing time/temperature controlled for safety food items (for longer than 48 hours). Variance information was provided to operator. Corrective Action: Corrected at time of inspection.
