Observed RTE/TCS food items (ham and cheese pastry, tomato thyme tart, and cream cheese danish) at 70-75'F stored at room temperature at the time of inspection. Per PIC, items had been prepped and cooked five hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
