Per PIC, loose leafy greens and cabbage have sauces have been out of proper cold holding temperatures for less than 4 hours; spicy mayo and miso sauces more than 4 hours. Predefined Comment: TCS sauces improperly cold held were discarded by PIC at time of inspection; leafy greens and cabbage will be held for time for temperature control for remaining time until 6 pm and discarded. Corrective Action: Corrected at time of inspection.

Service line make table is holding cooked zucchini vegetable mix, corn and other non-time temperature control foods at 59 degrees F. As per person in charge product held in unit overnight. Instructed person in charge to not use unit until maintained so as to hold at 41 degrees F or less. One of 4 hot wells has been turned into cold hold for cooked noodles and salad mix. Product holding at 89 degrees F. As per person in charge they will convert back to hot holding noodles rather than cold holding. Instructed person in charge to discard all out of temperature time/temperature control foods. Reviewed cold holding and how to check thermometer calibration using ice water at 32 degrees F.
