Observed soap dispenser in the dish area to be without hand soap. Per person in charge, the dispenser does not work and they are waiting for a replacement from their distributor. Discussed with PIC Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided soap for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed mango pickled onion used under time as public health control (TPHC) 4 hour window sticker on the container at time of inspection. Discussed with PIC Time as a Public Health Control requires written procedures detailing processes for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. No written policy was obtained at time of inspection. Assisted PIC with TPHC policy. Also observed the container bucket of the pickled onions that are labeled 'keep refrigerated' in the walk-in has a date mark to expire in more than 1 month after opening. Discussed with PIC TCS items and items labeled 'keep refrigerated' shall have 7 day datemarking once opened Corrective Action: Corrected at time of inspection.

Observed spatulas, scoops and rice paddles stored either at room temperature or with a container labeled ice water that had no ice. Per PIC the company has them handle the product as they do not allow the scoop to be stored in the product. Discussed with PIC In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.
