2nd consecutive violation. In the back, meat, reach-in cooler, observed 3 raw ground beef tubes stored on the shelf above buckets of sour cream. Raw beef must be stored all ready to eat (RTE) foods. All raw animal proteins must be stored below RTE foods. Discussed proper raw food storage with manager foods were moved to proper storage. Comment: All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

2nd consecutive violation. Observed the mop sink faucet missing the cap for the atmospheric vacuum breaker and leaking water when turned on. The AVB must be kept in good repair at all times. Please have the vacuum breaker repaired. Observed the sprayer nozzle of the 3 compartment sink hanging at the same height as the flood rim of the sink basins. Please ensure that the sprayer keeps a 1 inch air gap above the flood rim of the 3 compartment sink basins.

Please address the following items before the re-inspection: 1. Certify the backflow preventer for the soda carbonator and provide report. 2. Provide a re-circulation for the water heater so hot water can be at point of service within 45 seconds upon activation. Hand sinks in the kitchen and restroom took a longer than 45 seconds at the hand sink in the kitchen and the restroom's hand sink did not have any hot water after 2 minutes. 3. Provide door sweep at the front door. 4. Provide metal 3/8" radius cove base at stainless steel walls at the hood.
