Inspector's notes

Observed 0ppm chlorine in final rinse of in-use mechanical dishwasher. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC will have the sanitizer dispenser repaired and staff will wash/rinse/sanitize using the available three compartment sink. Action: Corrected at time of inspection.
