Observed Lettuce and shredded cheese on bottom shelf of large reach in cooler at a temperature of 48-50*F at time of inspection. Person in charge explained they received the items at 8:30am temperatures were taken at 3pm.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed carrot cake with cream cheese frosting that had already been cooled, cucumber fetta sandwiches and salmon cream cheese sandwich all at a temperature of 46-47*F and made at approximately 1pm. Person in charge was advised that the temperature of all TCS foods need to be below 41*F at all times. Person in charge lowered temperature of large reach in cooler at time of inspection. Person in charge was informed toxic chemicals for the control of insects and rodents, shall not be allowed in a food establishment. Person in charge discarded wasp spray at time of inspection.
