Inspector's notes

Observed bean sprouts in water in lowboy prep cooler and iced tea and coffee containing milk in reach-in beverage cooler at 44-56°F. Observed ambient air temperature of 46 °F in prep cooler and 56 °F in beverage cooler as measured with min/max air Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per person in charge, bean sprouts had been placed in cooler four hours prior while tea and coffee had been placed in cooler two days prior. Bean sprouts were placed in walk-in cooler to rapidly cool and beverages containing milk were discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Observed rice cooling in covered container in walk-in cooler. Time/temperature control for safety (TCS) foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All cooling TCS foods were uncovered to allow for rapid cooling at time of inspection. Corrective Action: Corrected at time of inspection.
