#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

Observed cooling chicken wings and mac and cheese dated 8/5 in the reach in cooler with internal temperatures ranging from 47-52*F, when measured with a probe thermometer. Per PIC, the foods had cooled overnight. Observed more than 4 inches of food in each container with a tight fitting lid on top. Observed heavy condensation on the underside of the lids for both foods. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Advised PIC to air cool foods to 135*F before placing into the reach in freezer in shallow pans to rapidly cool. Advised PIC that the prep cooler and glass door cooler is intended only for storage of previously cooled or prepackaged and bottled foods and should not be used to cool TCS foods. Corrective Action: Corrected at time of inspection.
